TEJANO FOOD
Here are some recipes collected which have been passed down for generations. Most refer to this food as Tex-Mex. Many of the recipes have been forgotten with the passing of relatives. Dishes like these can feed a large family. All the ingredients are affordable and there is no specific recipe to follow.
BEANS
Ingredients:

In a large pot, boil water. Clean the pack of beans by removing broken pieces. Once heated add beans to the pot along with the bacon fat. Add garlic, onion, and salt as desired. Add the beans to hot water and cook for 1-2 hours. Continue to mix frequently and add water as needed.
CARNE PICADA

In a large pre-heated pan, add ground beef. No oil is needed as the fat of the meat will aid in the cooking process. As desired, add garlic, onion, and salt. Cook until brown.
ENCHILADAS
Ingredients:

Canola oil

Corn tortillas

Hamburger meat

In a large stirring pan, add thawed hamburger meat. Cook until brown and add garlic, onion, and salt). Set aside meat to cool. If needed, add 2 tablespoons of flour and tomato sauce to create a gravy.

In a clean pan, put 1/8 of a cup of canola oil and begin to warm using medium heat. Soak corn tortillas in oil to soften. Place them on a plate with a napkin to soak excess oil.

Grab a cake pan and begin to add the meat mixture into the corn tortilla. Roll up the tortillas and line them in the cake pan. Continue until the cake pan is full. Finally, add the leftover gravy and shredded cheese on top. Place in the oven at 350 degrees Fahrenheit for 30 minutes, or until cheese is melted.

In a large sauté pan, add oil and heat. Once heated add vermicelli to begin frying. Mix continuously to prevent it from burning. As it begins to brown, add 1 can of tomato sauce, 2 cups of water, and mix.
Add garlic, onion, and salt as desired. Bring to a boil, reduce the temperature (low to medium), and cover and simmer until cooked.

In a large pot, add oil. Once heated add 1 cup of rice to begin frying. Mix continuously to prevent it from burning. As it begins to brown, add 1 can tomato sauce and 2 cups of water. Add cumin, garlic, onion, and salt as desired. Continue to mix frequently to prevent it from sticking. Bring to a boil, reduce the temperature and simmer on low to medium heat until cooked.
TORTILLAS
Ingredients:

Lard

Warm water

In a large mixing bowl, add flour as desired along with boiling water. Create a dough-like mixture. Knead the dough with your hands until it is firm. Place the dough back inside the mixing bowl and cover with a towel for 1-2 hours to let it settle.​

Then grab golf ball size pieces of the dough. Place on a cutting bowl and add a dash of flour to prevent it from sticking. Use a rolling pin to create a round shape. Then transfer to a heated comal for tortillas to cook. Flip until cooked. Continue rolling dough until there is no more dough. For best flavor, serve fresh.
